Remember last week I mentioned I was going to make a chicken noodle soup to cure our colds...
Well here it is... and it was absolutely gorgeous and made us all feel 100% better....
Here's the recipe which I have amended slightly for your recipe book or first aid box.... I don't mind which ...
Chicken Noodle Soup to Soothe The Soul
- 1500ml chicken or vegetable stock
- 2 boneless, skinless chicken breasts
- 1 tsp chopped fresh ginger
- 1 garlic clove, finely chopped
- 400g medium egg noodles
- 4tbsp sweetcorn , canned or frozen
- 3-4 mushrooms , thinly sliced
- 3 spring onions, shredded
- 3 tsp soy sauce , plus extra for serving
Method
- Pour the stock into a pan and add the chicken, ginger and garlic. Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender. Remove the chicken to a board and shred into bite-size pieces.
- Return the chicken to the stock with the noodles, corn, mushrooms, half the spring onions and the soy sauce. Simmer for 3-4 mins until the noodles are tender. Ladle into two bowls and scatter over the remaining spring onions. Serve with extra soy sauce for sprinkling.
Sounds & looks delicious...nothing beats a good chicken soup for a weary body or soul...thanks for sharing your recipe :)

Just what I need with all the sniffing and snuffing going on in this house.... I will just leave out the sweetcorn as I don't like it !!
